Coconut Milk Popsicles

Welcome to my coconut milk popsicles. Updated for the summer of 2020 after originally sharing it with you in the summer of 2016. Whether you call them coconut milk popsicles, coconut milk lollies, coconut milk ice pops or coconut milk ice blocks, they are amazing for keeping you refreshed all year around.

Just like most people we are sun worshippers and love our summer days out by the ocean.

Then during the winter months when there is less to do, I find myself going through a recluse phase.

We live in Southern Portugal and we are lucky enough to live a 30 minute drive from our favourite beach and the local tourist beach is just 20 minutes away from our front door.

We also have our local Seaworld centre just 25 minutes away from our front door too and most years we will buy a seasonal pass.

When we are on a day out, we will often buy a nice cooling popsicle. When its very hot it will be a calypso as we find these cool us down better, then when its not so hot it changes to a white chocolate magnum.

But buying those popsicles for days at home can get expensive and are not always very healthy.

That is when I started experimenting in the summer of 2016, with making my own popsicles, both for me and for the kids.

This was when I was pregnant with Jorge and I was trying to stay as Paleo as possible. Sofia was 18 months old and I was trying my best to give her healthier treats.

We started by making delicious blender smoothies and then what was leftover went into popsicle moulds and into the freezer for her to have later.

We had been sent some amazing cute shaped popsicles that summer that were the perfect size for baby led weaning treats.

We call these our basic coconut milk popsicles because they are the basic recipe that you can then add in ingredients for specific flavoured lollies.

Just save our coconut milk popsicle recipes for later, or print it out and have it as your starting point, have some as a smoothie if you like, or load them all into moulds.

How To Make Popsicles Creamy Not Icy?

Our coconut milk popsicles have 2 key ingredients that stop them from being icy and make sure they are wonderfully thick and creamy.

You can then call these your base ingredients and add your own preferred flavours to them.

There are 2 main ingredients that make popsicles creamy:

I am a big fan of natural sweeteners and will use maple syrup or stevia to add natural sugar to my popsicles.

Or if you don’t follow a vegan diet, then honey is also a great option.

These ingredients in our coconut popsicles are also common in making paleo ice cream, so imagine if they are thick enough for ice cream, that they will do a great job as refreshing creamy ice lollies.

Coconut Milk Popsicle Flavours

Coconut milk and bananas are your base ingredients along with stevia, maple syrup or honey. But once you have the base ingredients it is all about flavours and making your popsicle have the wow factor.

  • Berry Popsicles – Add in a little frozen strawberries and frozen blueberries and you have a bright coloured berry popsicle.
  • Creamy Vanilla Popsicles – Add vanilla essence to the blender for a vanilla flavoured coconut popsicle.
  • Raspberry Coconut Popsicles – Frozen raspberries are so easy to blend due to their size and give a refreshing summer flavour to your lollies. I add raspberry to my summer popsicles the most.
  • Mixed Berry Popsicles – I love those bags of frozen berries that have blackberries, blackcurrants and often cherries. They are perfect for a summer fruit berry mix and just add ½ a cup of frozen berries to the blender.

How To Make Coconut Popsicles?

Making coconut popsicles is so easy, I will supervise my kids as they make it themselves.

They love the adventure of pouring everything out, loading it into the blender and then choosing which of their favourite popsicle moulds will be used in their lollies.

Though, they are not a fan of having to wait for the popsicles to set and want them ready instantly!

Load the ingredients into the blender:

  • Coconut Milk
  • Sliced Banana
  • Maple Syrup

Blend the ingredients, pour into popsicle moulds and freeze for later.

Though a few tips to remember when making homemade popsicles:

  • #1 Carry the moulds to the freezer on a chopping board. It will stop them from spilling and perfect if your freezer lacks space.
  • #2 Add a little frozen fruit at a time if flavouring your popsicles. Its better to add more, than end up with lollies that are way too fruity.
  • #3 Don’t overfill the moulds as it makes it difficult to get them out later. Also position the popsicle sticks so that they are going to be in a good position when made. You don’t want too much stick or not enough stick.

How To Make Vegan Popsicles?

Most of the popsicles I make are vegan, without me even thinking that I want a vegan popsicle.

But I notice many online recipes for popsicles are NOT vegan. This is because they will include dairy and honey.

If you ever see a popsicle recipe and want to make it vegan, just swap the dairy for a vegan alternative.

Many lollies will use Greek yoghurt and swap this for the same in coconut milk or another dairy.

Many popsicles that are not vegan will use honey and a simple swap for maple syrup will do the trick.

  • Load sliced banana, a can of coconut milk and maple syrup into a blender and blend until smooth.

  • Add in any extra ingredients such as frozen fruit and blend again.

  • Pour into popsicle moulds and freeze for 3-4 hours.

  • Serve.

Notes

You can also use our coconut milk popsicle recipe for a refreshing summer smoothie or load into a tub for frozen paleo ice cream.

I like to add berries to my popsicle, but you can also have it plain like this recipe.
