FAQs

What happens if you put too much baking soda in banana nut bread? ›

Bitter Taste: Excessive baking soda can leave a bitter taste in the bread. Baking soda is alkaline, and an excessive amount of it can result in an unpleasant flavor. Unpleasant Texture: Too much baking soda can lead to a coarse and crumbly texture in the bread.

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.

What does too much flour do to banana bread? ›

If you use too much flour, you'll end up with really dry banana bread, and If you don't use enough flour, your banana bread will be way too wet. The secret lies in how you measure the flour. The scoop out of the bag method could be packing way too much flour.

What does it mean when my banana bread sinks in the middle? ›

There are a variety of reasons why yours may be sinking on cooling but it is most likely that it isn't quite fully baked. Banana bread tends to form a firmish crust on the outside, so even if it looks baked it may not quite be done which means that it will sink as it cools.

Is baking soda or powder better for banana bread? ›

Baking soda works best in conjunction with an acidic ingredient. In the case of banana bread, this may be buttermilk, brown sugar, molasses or the bananas themselves. Recipes generally include just enough baking soda to balance the acidity in the batter.

What happens if you put too many eggs in banana bread? ›

Adding more eggs makes for a spongy, less flavorful banana bread. Doubling the number of eggs I was using resulted in a spongy cake with a moist texture.

Why use both baking soda and baking powder in banana bread? ›

Basically, the reason for both is because sometimes you need more leavening than you have acid available in the recipe. It's all about balance. Another reason to use both baking powder and baking soda is because they affect both browning and flavor.

Can you put too much banana in banana bread? ›

Banana bread recipes typically ask you to use overripe bananas so that they're easier to mush. This means it's tempting to toss all your bananas into the mix when you're ready to bake, to avoid food waste. But if you add too much of the fruit into your batter, your bread could turn out mushy, heavy, and wet.

Can bananas be too ripe for banana bread? ›

If they smell off, that's another good indicator that they are no longer okay to use. Rotten bananas will often have a fermented or alcohol-like smell. While it's okay if the banana peel is dark brown or even black, if the inside is too, then the fruit is beyond ripe and now on its way to rotten.

Why did my banana bread come out gummy? ›

Check your oven to make sure it really is showing the correct temperature that you set it for and another thing is to make sure you only add in the amount of mashed up bananas that the recipe calls for. Sounds like you are not measuring properly to many bananas will make it gummy.

Is it better to use bread flour or all purpose flour for banana bread? ›

Though it is called banana bread,it is not actually a bread . It is more of a cakey loaf made by the addition of soda bi carbonate as a leavening agent. The is no requirement of developing gluten in these kind of loaves and so even all purpose flour with a low content of gluten is good enough.

Why do you not put baking powder in banana bread? ›

If you are using regular milk, you would normally use baking powder. Banana bread normally calls for sour milk, sour cream or buttermilk; all of these are acidic, so in this case what you need is baking soda.

What happens if you put too much salt in banana bread? ›

If you add too much salt, Curtis recommends using a splash of vinegar. This provides a counterbalancing punch of acid that will lessen the salty taste.

How do you keep raisins from going to the bottom of a cake? ›

The best way to avoid sinking fruit is to toss the fruit in a couple of tablespoons of the flour (just use some from the measured amount for the recipe) to coat it lightly. Once added to the cake mixture the flour coating will thicken the batter immediately surrounding the fruit and help suspend the fruit.

Why do walnuts turn black in baking? ›

They are just getting toasted and developing depth of flavor. If they didn't all they would taste like are raw walnuts. It's a good thing.

How do you add nuts to cake batter? ›

You sure can! A general rule of thumb is to add no more than ½ cup of nuts, chocolate chips, raisins, etc. to the cake mix. Just be sure that the folks who will be eating your treats aren't allergic to nuts.
