Today I'm sharing not one but two fun meal ideas for kids. These cute meals were commissioned by Heinz Ireland to celebrate the kids going back to school in September and I had so much fun creating them! Both meals are easy and quick to create - with the help of childhood classics Heinz Hoops No Added Sugar and Heinz Beanz No Added Sugar.

Earlier this year I wrote about why Beanz on Toast is the classic meal that every parent needs in their recipe repertoire, and I think we can all agree that this year has provided more than enough tough parenting moments that require quick and easy meals for our kids! Easy doesn't have to mean boring though, so I designed these fun meals to be creative and fun whilst still remaining extra easy - perfect to whip up for the kids during the week when they come home from school.

First though, here are some top tips for getting back into the swing of things with back to school weeknight meals, I hope you find them helpful!

Top Tips for Feeding Kids When they go back to School

Plan ahead – Often half of the stress of evening mealtimes is just deciding what to cook. Take some time at the weekend to plan your meals for the week – you could even write up a little menu so the kids know what to expect.

Keep things simple – plan quick and easy meals for weekdays after school and keep more time-consuming recipes for the weekend.

Know your schedule – Think ahead about days when time is particularly short, for example if you have after school clubs or activities. Plan no-cook or extra easy meals for those days – think Heinz Hoops with No Added Sugar on wholemeal toast, Heinz Beanz with No Added Sugar on baked potatoes or fish fingers with crunchy veg sticks.

Get the kids involved – the more involved they are, the more likely they are to enjoy their meals. Ask them for suggestions when you are meal planning, and then let them help you make them. Many kids enjoy cooking and there’s a real sense of pride in helping to make the family meal, even if it’s just stirring the Beanz as they cook!

Love your leftovers – plan to make extra for the next day’s meal or just get creative with accidental leftovers. For example use leftover veggies in an omelette, use leftover soup as a base for a pasta sauce or throw leftover Beanz into a chilli.

Aim for 5 a day – the evening meal is a great opportunity to boost your kids veg intake. Serve a rainbow of different vegetables to keep things interesting or try cutting them into shapes for extra fun. Don’t forget, a portion of Beanz counts as one of your five a day too.

Make it fun – Take an extra minute or two to turn ordinary plates of food into fun works of art your kids will love! It doesn’t have to be complicated – use veggies to make funny faces, cut toast into fun shapes using cookie cutters and thread cooked food onto skewers for a fun meal on a stick.

Let kids be the artists – challenge your kids to design their own healthy food art meals, they might surprise you with their ideas! Let them plan the whole thing from start to finish or give them a plate of different foods and let them rearrange it to their own design.

Flowery Egg in Pepper Fun Meal

Ingredients (serves 1):

  • 1 yellow pepper
  • 1 tsp vegetable oil
  • 1 medium egg
  • ½ can Heinz Hoops No Added Sugar
  • 3 slices carrot
  • ¼ cucumber

Method:

Cut the top from the pepper, pull out the seeds and discard. Slice a thick ring from the pepper, around 2cm thick.

Heat the oil in a frying pan on a medium heat and gently fry the pepper ring for a couple of minutes until starting to soften.

Flip over and cook on the other side, then crack the egg into a glass and carefully pour it into the pepper ring. Don’t worry if a little egg escapes under the side – this can be removed before serving.

Turn the heat down a little to a medium-low setting, add a lid to the frying pan and cook gently until the egg white is completely set – around 4-6 minutes.

While the egg is cooking, heat the Heinz Hoops No Added Sugar according to pack instructions and spoon onto the bottom half of the plate in a neat line.

Cut flowers from the carrot slices, and stalks and leaves from the cucumber.

When the egg is cooked through, remove from the pan, trim any excess egg from around the pepper ring then place on the plate above the Heinz Hoops No Added Sugar.

Add a cucumber stalk and leaf underneath the pepper to turn it into a flower, then decorate the rest of the plate with the carrot flowers and remaining cucumber stalks and leaves.

Serve immediately and enjoy!
