Okay folks, this is my go-to homemade caramel recipe. I almost want to keep it a secret. It is that easy and delicious. If you haven't figured this out about me yet I am a sucker for things that are awesome and easy. Does that make me lazy? Probably. Will I ever change? Doubt it.

Anyway back to the topic at hand!

Homemade Caramel

Every fall we make this homemade caramel sauce and it is one of my kids favorite traditions! For good reason too because this stuff is to die for good.

You can use this homemade caramel in a multitude of ways. My two favorites are caramel popcorn and caramel ice cream sundaes. Not your thing? Cake? Brownies? Dip for apples? Yes, yes and yes.

Ingredients for Homemade Caramel

  • Brown Sugar
  • Butter
  • Karo Syrup
  • Sweetened Condensed Milk

It really is so simple! Like most of the recipes I post on this blog, it is cost effective. I always have all these ingredients on hand (granted, the Karo syrup is only on hand for this very recipe, but still.)

All you do is melt the ingredients in a saucepan over medium-low heat. Once caramel is boiling cook for approximately two minutes stirring constantly.

It doesn't get any easier than that!

How to Make Caramel Popcorn

  • Pour caramel over popcorn immediately after removing it from the stove. This recipe will cover three or four bags of microwave popcorn thoroughly.
  • Store leftovers in an airtight container for up to a week.
  • This caramel is soft and so it will make soft, gooey caramel popcorn (my favorite kind). If you prefer a crunchier, harder caramel popcorn you can spread your caramel covered popcorn out on a greased baking sheet and bake at 250 for about an hour, turning every 15 minutes or so.

I think it would be so cute to put this in the baby canning jars to give as gifts, just enough for a few bowls of ice cream once opened.

FAQs

Is caramel just sugar and water? ›

Wet caramel is made by combining sugar and a liquid and cooking them together, while dry caramel is made from just sugar, heated in a dry pan until it liquefies and browns.

Why are my caramels so sticky? ›

There are a number of possibly reasons. Certain ingredients like corn syrup can make it sticky. Not cooking the candy all the way to hard crack stage can make it more sticky. High humidity in the air can make it sticky.

What thickens homemade caramel? ›

To thicken a caramel sauce, use one tablespoon of cornstarch or tapioca starch (sometimes known as tapioca flour) and one tablespoon of water per cup of caramel. Then simmer the caramel, stirring it constantly with a wooden spoon until it becomes thick.

Why is my homemade caramel so hard? ›

This is usually caused by sugar crystals stuck to the side of the pan that didn't get fully dissolved. It only takes one to set off a chain reaction, and before you know it you have crunchy caramel.

Why does my homemade caramel taste bitter? ›

The temperature of the caramel can rise so rapidly that it is hard to keep it in the desired temperature range, shown above. As a result, the caramel could burn and taste bitter.

Why do you put vinegar in caramel? ›

Add acid. Acid ingredients (like vinegar or lemon juice) can help prevent re-crystallization which causes caramel to become grainy. Acid physically breaks the bonds between the glucose and fructose molecules that form sucrose and ensure that it stays apart.

Should you stir sugar when making caramel? ›

Editor's Tip: After incorporating the sugar into the water, it's important not to stir or the sugars can crystallize and cause the caramel to seize up. Instead, swirl the pan from time to time to ensure the sugar melts evenly.

How do you fix caramel that didn't set? ›

you simply haven't cooked it enough-- possibly your microwave is less powerful (the original recipe doesn't specify a wattage for cooking the caramel) or the butter you used has a higher water content. You could try cooking the mixture for a little longer, and seeing if it sets up firmer.

Why do my homemade caramels stick to the wax paper? ›

In general the paper sold for home use is too light weight, the grain of the paper isn't made to withstand twisting (it tears), and the wax coating is too light to prevent the moisture from the candy from seaping into the paper and weakening it thus causing it to tear and stick.

Can I reboil my caramel? ›

Yep, you can do it for sure. Ive had the problem in the past when I removed a caramel too quickly and it was too soft. You just need to add water to dissolve the sugar completely, the go ahead and reboil.

Why do you put condensed milk in caramel? ›

Basic caramel has sugar, milk, and butter in it, and is then brought up to a high temperature until it all thickens up. By starting with condensed milk, we already have milk and sugar combined and it is already partially thickened, so caramel is made more quickly.

Is it safe to boil a can of condensed milk? ›

Is it safe to boil my can of sweetened condensed milk to make caramel sauce? No. For safety reasons, we do not recommend heating a can of our condensed milk, opened or unopened. The current can is not designed to withstand high temperatures.

Does boiling a can of condensed milk turn into caramel? ›

This is a simple baking hack to create 'Carmel in a Can' (Dulce De Leche). It comes together super easy, all you need to do is take the label off a can of condensed milk, fire it into boiling water for about 3 hours (make sure it's fully under the water) and boom, it's ready to go.

Does baking soda speed up caramelization? ›

Baking soda makes the onions more alkaline, which speeds up the browning reactions necessary for properly caramelized onions. But it also weakens the pectin that holds the onion's cells together, turning what should be soft but distinct pieces of browned onion into a nauseating stew of pea-green mush.

What enhances caramel flavor? ›

Finally, caramel is always enhanced with the addition of citrus zest, especially orange zest, or by substituting fruit puree for some of the cream in the caramel base recipe.

What does adding more baking soda do? ›

Too much baking soda in a recipe can give your baked goods a metallic or soapy taste, so be careful with your amounts in conversions. As a rule of thumb, 1 teaspoon of baking powder is equivalent to ¼ teaspoon of baking soda in terms of leavening power.
